Apple have set it up so you cant delete them easily, and it may be unsafe to do so. So you see them in Illustrator like all your MacOS fonts. They've currently become uninstalled, but I can reinstall them. They are included with MacOS, in effect a part of your Mac. And these are fonts that I've actively installed.
